Slow elk

A tongue-in-cheek term for a cow or beef, particularly cattle butchered for meat off-season or without strict legality, jokingly 'hunted' like game. The expression plays on calling domestic beef a wild quarry. It is old ranch and Depression-era humor still heard in rural Montana.
