What does “runza” mean
A yeast-dough pocket filled with ground beef, cabbage or sauerkraut, onion and seasoning, descended from the Volga German 'bierock' brought to the Plains by ethnic Germans who farmed Russia under Catherine the Great. Sarah 'Sally' Everett opened the first Runza restaurant in Lincoln in 1949, and the chain is now treated as a Nebraska civic institution alongside Cornhusker football.
