What does “bierock” mean
A bierock is a soft baked roll filled with seasoned ground beef, cabbage, and onion, brought to Kansas in the 1870s by German-Russian Mennonite immigrants. It is a staple at church suppers, school cafeterias, and bakeries across the state, and is sometimes sold under the trademarked name 'Runza' in neighboring Nebraska. The dish is strongly identified with central Kansas's German-Russian heritage.
