Hot wiener

Also called a New York System wiener despite being unmistakably Rhode Island, this is a small steamed-bun hot dog of beef, veal, and pork piled with a finely ground spiced meat sauce, yellow mustard, chopped onion, and a shake of celery salt. Built by Greek-American immigrants in Providence by the 1940s, they are traditionally ordered 'all the way' and lined up on the counterman's bare arm. The Olneyville New York System is the canonical institution.
