What does “possum pie” mean
Despite the name, there is no marsupial in it — the pie is said to 'play possum' by hiding its many layers under a thick whipped-cream blanket. It has been a fixture in Western and Northern Arkansas bakeries and church potlucks since the 1980s and is essentially unknown outside the state. Atlas Obscura ranks it among Arkansas's signature regional foods.
