What does “lefse” mean

A soft, thin flatbread of riced potatoes, flour, butter and milk cooked on a dry griddle, brought west by the great late-1800s Norwegian migration. North Dakota and Minnesota families still organize multi-generation 'lefse-making days' around Thanksgiving and Christmas; Fargo and Fosston host lefse festivals and competitions every year.
