Biscochito

A biscochito (sometimes spelled bizcochito) is a small, lard-based shortbread cookie flavored with anise seed and rolled in cinnamon sugar, brought to New Mexico by early Spanish colonists. The Legislature made it New Mexico's official state cookie in 1989 — the first U.S. state to designate one — and the cookie is non-negotiable at weddings, baptisms, quinceañeras, and Christmas. Outside northern New Mexico and southern Colorado, the name and the cookie are basically unknown.
