St. Paul sandwich

A Chinese-American fusion sandwich from St. Louis, Missouri: an egg foo young patty (eggs, mung bean sprouts, minced onion) tucked between two slices of plain white bread with mayonnaise, dill pickle slices, lettuce, and white onion. Local legend credits Steven Yuen at Park Chop Suey in the 1940s, who named it after his Minnesota hometown, confusingly, it is not sold in St. Paul itself. It remains a staple at Chinese carryouts across the St. Louis metro.
