What does “Italian beef” mean

Thinly sliced, slow-roasted beef simmered in seasoned jus and piled on a French roll, topped with sweet peppers or spicy giardiniera. Invented by Italian-American immigrants in 1930s Chicago and almost impossible to find done correctly outside the metro area.
