Loco moco

A pillar of contemporary Hawaiian local cuisine: a scoop of white rice topped with a hamburger patty, smothered in brown gravy, and crowned with a sunny-side-up egg. It was invented in 1949 at the Lincoln Grill in Hilo by Richard and Nancy Inouye as a cheap, filling meal for teenagers; the name came from one of those teens' nickname 'Crazy' (loco) plus 'moco' because it rhymed. Modern versions swap in kalua pork, Spam, teriyaki beef, or kimchi.
